Easy Chicken Soft Tacos Anyone Can Makefeatured

Last night, I finally made something really good for dinner. I took a hiatus from Pinterest (and studying) and made these Chicken Soft Tacos for dinner. This recipe is so easy and flavorful, you’ll want to make it again and again! Anyone can make them, because it’s that easy.


I’ve been a bit MIA from blogging recently because of school and studying. In the past 2 weeks I’ve had 5 exams and 3 quizzes (my definition of 24/7 stress). I have one more quiz to tackle later this week, but I finally decided to let myself take a break from studying to blog. To say the least, I’m still learning how to balance my time with everything I want to do. Does it ever get easier? Probably not.

Likewise, my eating habits these past few weeks have been the staple diet of college students. I’ve eaten Ramen noodles for dinner. Also, I believe you can never go wrong with a good PB&J sandwich and a glass of almond milk for lunch (this is my inner 5 year old speaking), and I may or may not have also eaten cereal for dinner last week too.

Now lets taco about what I made for dinner!


The preparation for these tacos is really simple. At the grocery store, I got some BBQ mesquite rotisserie chicken, pre-made guacamole, and shredded Mexican cheese, and fresh made tortillas from the bakery.

The only thing that takes up some time is shredding the chicken. I took all the skin off the chicken and took the meat off the bones. I throw the skin away because its healthier to eat the chicken without it but it definitely adds flavor to the meat if you want to shred the skin with the meat.

Next, you just want to mix all the spices together in a small bowl and sprinkle it over the chicken.

Lastly, if they are cold heat the tortillas up in the microwave for a few seconds until they are warm and maybe the chicken too if its gotten cold.

Putting It Together

This is the part we finally get to eat! Its fun because everyone can create their own taco. It’s like a mini taco bar:) I chose to top my tacos with just guacamole and Mexican cheese but, honestly, the possibilities for toppings are endless. You can have salsa, add rice, sour cream, shredded lettuce, and anything else you might want in a taco! My side for the night was corn, and I put a little bit of that in my taco too!

Easy Chicken Soft Tacos

This chicken soft taco recipe is so simple and easy anyone can make it. I modified this recipe from Parker's mom's recipe book so hope you like it!

  • 1 tsp onion powder
  • 1/4 tsp ground cumin
  • 1/2 tsp garlic salt
  • 1/4 tsp pepper
  • 1 pinch salt to taste


  • 1 original or mesquite chicken


  • 10 tortillas


  • 1 Packet Mexican cheese

Toppings (optional)

  • sour cream
  • shredded lettuce
  • salsa
  • guacamole
  • pico do gallo
  • rice
  • corn


  1. Mix all spices, except plain salt, in a small mixing bowl.

  2. Take the meat off the bone of the chicken.Shred the chicken and sprinkle the spice mix over it. Taste the chicken and add more salt and spices if necessary. 

  3. Microwave the chicken to reheat it. Warm up the tortillas in the microwave too. Get all your toppings and ready, set, build you taco!

Recipe Notes

For the chicken, I just used rotisserie chicken form the grocery store and took the skin off before I shredded the chicken to make it healthier. 

Also, I used chicken for this recipe but feel free to use any kind of meat for the tacos. I like chicken because I think it tastes the best for this recipe but you can use pork, beef, or even shrimp!

To shred the chicken, I just use two forks.

I bought guacamole form the store just because I didn't feel like making it at home but you can definitely make homemade guacamole. Sometimes I cut slices of avocado and put it on my tacos.

Anything else you might like to top you tacos with is fair game!

For side dishes I recommend corn, Mexican rice (brown rice to make it healthier) or beans. 

This is an easy recipe to make really healthy too with wheat tortillas, white meat, and minimal cheese.
